Ingredients
- Red bell pepper - 2 medium
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Place the red bell peppers on a baking sheet and roast in the oven for about 20 minutes, or until the skin is charred and blistered.
- Remove the peppers from the oven and let them cool slightly before peeling the skin off and removing the seeds.
- Chop the roasted peppers into small pieces and set aside.
- In a skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for 1-2 minutes until fragrant.
- Add the chopped roasted peppers to the skillet along with cumin, paprika, salt, and black pepper. Cook for an additional 5 minutes, stirring occasionally.
- Remove from heat, stir in the chopped parsley and lemon juice, and mix well.
- Serve warm or at room temperature with bread for dipping.
