Ingredients

  • Red bell pepper - 2 medium
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Place the red bell peppers on a baking sheet and roast in the oven for about 20 minutes, or until the skin is charred and blistered.
  3. Remove the peppers from the oven and let them cool slightly before peeling the skin off and removing the seeds.
  4. Chop the roasted peppers into small pieces and set aside.
  5. In a skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for 1-2 minutes until fragrant.
  6. Add the chopped roasted peppers to the skillet along with cumin, paprika, salt, and black pepper. Cook for an additional 5 minutes, stirring occasionally.
  7. Remove from heat, stir in the chopped parsley and lemon juice, and mix well.
  8. Serve warm or at room temperature with bread for dipping.
