  • Garlic - 2 cloves, minced
  • Tomatoes - 2 medium, chopped
  • Red bell pepper - 1, diced
  • Ground cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a medium skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and diced red bell pepper to the skillet, cooking for another 3 minutes until softened.
  3. Stir in the chopped tomatoes, ground cumin, smoked paprika, ground coriander, salt, and black pepper. Cook for 10-15 minutes, stirring occasionally, until the sauce thickens.
  4. Gently nestle the white fish fillets into the sauce, cover, and simmer for 8-10 minutes until the fish is cooked through and flakes easily with a fork.
  5. Remove from heat, then stir in the fresh parsley and lemon juice. Adjust seasoning if necessary.
