- Tomatoes - 2 medium, chopped
- Red bell pepper - 1, diced
- Ground cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Heat the olive oil in a medium skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced red bell pepper to the skillet, cooking for another 3 minutes until softened.
- Stir in the chopped tomatoes, ground cumin, smoked paprika, ground coriander, salt, and black pepper. Cook for 10-15 minutes, stirring occasionally, until the sauce thickens.
- Gently nestle the white fish fillets into the sauce, cover, and simmer for 8-10 minutes until the fish is cooked through and flakes easily with a fork.
- Remove from heat, then stir in the fresh parsley and lemon juice. Adjust seasoning if necessary.
