Ingredients
- Green or brown lentils - 100 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Carrot - 1 small, diced
- Bell pepper - 1/2, diced
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Cilantro - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Rinse the lentils under cold water and place them in a pot with 300 ml of water. Bring to a boil, then reduce heat and simmer for about 15-20 minutes until tender. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the diced tomato, carrot, and bell pepper, cooking for about 5-7 minutes until the vegetables have softened.
- Add the cooked lentils to the skillet along with cumin, paprika, salt, and black pepper. Mix well and cook for another 5 minutes, allowing the flavors to meld.
- Remove from heat and stir in chopped cilantro and lemon juice. Adjust seasoning if necessary.
- Serve warm or at room temperature, garnished with extra cilantro if desired.
