Ingredients

  • Green or brown lentils - 100 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Carrot - 1 small, diced
  • Bell pepper - 1/2, diced
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the lentils under cold water and place them in a pot with 300 ml of water. Bring to a boil, then reduce heat and simmer for about 15-20 minutes until tender. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the diced tomato, carrot, and bell pepper, cooking for about 5-7 minutes until the vegetables have softened.
  5. Add the cooked lentils to the skillet along with cumin, paprika, salt, and black pepper. Mix well and cook for another 5 minutes, allowing the flavors to meld.
  6. Remove from heat and stir in chopped cilantro and lemon juice. Adjust seasoning if necessary.
  7. Serve warm or at room temperature, garnished with extra cilantro if desired.
