Ingredients

  • Eggplant - 200 grams
  • Tomato - 150 grams, diced
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Parsley - 2 tablespoons, chopped
  • Chickpeas - 100 grams, cooked
  • Breadcrumbs - 50 grams
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Burger buns - 2
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F). Slice the eggplant in half and score the flesh with a knife. Drizzle with 1 tablespoon of olive oil and sprinkle with salt. Roast in the oven for 25 minutes until tender.
  2. While the eggplant is roasting, heat 1 tablespoon of olive oil in a pan over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the diced tomato, cumin, paprika, salt, and pepper. Cook for about 10 minutes until the mixture thickens.
  3. Once the eggplant is roasted, scoop the flesh out and add it to the tomato mixture in the pan. Add the cooked chickpeas and mash everything together with a fork. Stir in the chopped cilantro and parsley.
  4. Add the breadcrumbs to the mixture until it holds together. Form the mixture into two burger patties.
  5. In the same pan, add a little more olive oil and cook the patties over medium heat for about 4-5 minutes on each side until golden brown.
  6. To make the tahini sauce, mix tahini with lemon juice, a pinch of salt, and a little water until smooth.
  7. Assemble the burgers by placing the patties on the burger buns and drizzling with tahini sauce. Add any additional toppings as desired, such as lettuce or sliced tomatoes.
  8. Serve immediately and enjoy your Zaalouk Burger!
