Zaalouk Burger

Ingredients
- Eggplant - 200 grams
- Tomato - 150 grams, diced
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Cilantro - 2 tablespoons, chopped
- Parsley - 2 tablespoons, chopped
- Chickpeas - 100 grams, cooked
- Breadcrumbs - 50 grams
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Burger buns - 2
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F). Slice the eggplant in half and score the flesh with a knife. Drizzle with 1 tablespoon of olive oil and sprinkle with salt. Roast in the oven for 25 minutes until tender.
- While the eggplant is roasting, heat 1 tablespoon of olive oil in a pan over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the diced tomato, cumin, paprika, salt, and pepper. Cook for about 10 minutes until the mixture thickens.
- Once the eggplant is roasted, scoop the flesh out and add it to the tomato mixture in the pan. Add the cooked chickpeas and mash everything together with a fork. Stir in the chopped cilantro and parsley.
- Add the breadcrumbs to the mixture until it holds together. Form the mixture into two burger patties.
- In the same pan, add a little more olive oil and cook the patties over medium heat for about 4-5 minutes on each side until golden brown.
- To make the tahini sauce, mix tahini with lemon juice, a pinch of salt, and a little water until smooth.
- Assemble the burgers by placing the patties on the burger buns and drizzling with tahini sauce. Add any additional toppings as desired, such as lettuce or sliced tomatoes.
- Serve immediately and enjoy your Zaalouk Burger!
