- Eggplant - 200 grams
- Tomatoes - 300 grams, diced

- Black pepper - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons, chopped

Steps
- Cut the eggplant into small cubes and sprinkle with salt. Let it sit for 10 minutes to draw out moisture.
- Rinse the eggplant cubes under cold water and pat them dry with a paper towel.
- In a skillet, heat the olive oil over medium heat. Add the eggplant and sauté until golden brown, about 5-7 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the diced tomatoes, cumin, paprika, salt, and black pepper. Cook for about 10-15 minutes, stirring occasionally, until the tomatoes have broken down and the mixture is thick.
- Remove from heat, stir in the chopped cilantro and lemon juice.
- Serve warm or at room temperature, garnished with additional cilantro if desired.
