Ingredients

  • Eggplant - 200 grams
  • Tomatoes - 300 grams, diced

  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Cut the eggplant into small cubes and sprinkle with salt. Let it sit for 10 minutes to draw out moisture.
  2. Rinse the eggplant cubes under cold water and pat them dry with a paper towel.
  3. In a skillet, heat the olive oil over medium heat. Add the eggplant and sauté until golden brown, about 5-7 minutes.
  4. Add the minced garlic and cook for an additional minute until fragrant.
  5. Stir in the diced tomatoes, cumin, paprika, salt, and black pepper. Cook for about 10-15 minutes, stirring occasionally, until the tomatoes have broken down and the mixture is thick.
  6. Remove from heat, stir in the chopped cilantro and lemon juice.
  7. Serve warm or at room temperature, garnished with additional cilantro if desired.
