- Chickpeas - 200 grams, cooked or canned, drained
- Diced tomatoes - 400 grams, canned
- Vegetable broth - 250 ml
- Raisins - 50 grams
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
- Almonds - 30 grams, toasted, for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a large oven-safe pot or tagine, heat olive oil over medium heat.
- Add the diced onion and minced garlic, sautéing until the onion is translucent.
- Stir in the sliced carrot and cook for 5 minutes until slightly softened.
- Add the diced zucchini and bell pepper, cooking for another 5 minutes.
- Mix in the cooked chickpeas, diced tomatoes, vegetable broth, raisins, cumin, cinnamon, coriander, paprika, salt, and black pepper.
- Bring the mixture to a gentle simmer, allowing the flavors to meld for about 5 minutes.
- Cover the pot with a lid or aluminum foil and transfer it to the preheated oven.
- Bake for 25 minutes until the vegetables are tender and the flavors are concentrated.
- Remove from the oven and let it sit for 5 minutes before serving.
- Garnish with fresh cilantro and toasted almonds before serving.
