Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 large, sliced
  • Zucchini - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Chickpeas - 200 grams, cooked or canned, drained
  • Diced tomatoes - 400 grams, canned
  • Vegetable broth - 250 ml
  • Raisins - 50 grams
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish
  • Almonds - 30 grams, toasted, for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large oven-safe pot or tagine, heat olive oil over medium heat.
  3. Add the diced onion and minced garlic, sautéing until the onion is translucent.
  4. Stir in the sliced carrot and cook for 5 minutes until slightly softened.
  5. Add the diced zucchini and bell pepper, cooking for another 5 minutes.
  6. Mix in the cooked chickpeas, diced tomatoes, vegetable broth, raisins, cumin, cinnamon, coriander, paprika, salt, and black pepper.
  7. Bring the mixture to a gentle simmer, allowing the flavors to meld for about 5 minutes.
  8. Cover the pot with a lid or aluminum foil and transfer it to the preheated oven.
  9. Bake for 25 minutes until the vegetables are tender and the flavors are concentrated.
  10. Remove from the oven and let it sit for 5 minutes before serving.
  11. Garnish with fresh cilantro and toasted almonds before serving.
