- Bell pepper, diced - 1 small

- Zucchini, thinly sliced - 1 small
- Black olives, pitted and sliced - 50 grams
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh basil leaves - for garnish
Steps
- Preheat your oven to 200°C (400°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced bell pepper, sliced red onion, and zucchini; sauté for about 5-7 minutes until softened. Season with salt and black pepper.
- Place the msemen flatbreads on a baking sheet lined with parchment paper.
- Spread 50 grams of tomato sauce evenly over each msemen, leaving a small border around the edges.
- Sprinkle 75 grams of shredded mozzarella cheese on top of the sauce on each msemen.
- Distribute the sautéed vegetables evenly over the cheese on each msemen.
- Top with sliced black olives and sprinkle with dried oregano.
- Add the remaining mozzarella cheese (75 grams) on top of the vegetables and olives.
- Drizzle with the remaining tablespoon of olive oil and season with additional salt and pepper if desired.
- Bake in the preheated oven for 12-15 minutes or until the cheese is melted and bubbly, and the edges of the msemen are golden brown.
- Remove from the oven, garnish with fresh basil leaves, slice, and serve warm.
