Ingredients

  • Msemen (Moroccan flatbread) - 2 pieces
  • Olive oil - 2 tablespoons
  • Tomato sauce - 100 grams
  • Mozzarella cheese, shredded - 150 grams
  • Bell pepper, diced - 1 small
  • Red onion, thinly sliced - 1 small
  • Zucchini, thinly sliced - 1 small
  • Black olives, pitted and sliced - 50 grams
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil leaves - for garnish

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced bell pepper, sliced red onion, and zucchini; sauté for about 5-7 minutes until softened. Season with salt and black pepper.
  3. Place the msemen flatbreads on a baking sheet lined with parchment paper.
  4. Spread 50 grams of tomato sauce evenly over each msemen, leaving a small border around the edges.
  5. Sprinkle 75 grams of shredded mozzarella cheese on top of the sauce on each msemen.
  6. Distribute the sautéed vegetables evenly over the cheese on each msemen.
  7. Top with sliced black olives and sprinkle with dried oregano.
  8. Add the remaining mozzarella cheese (75 grams) on top of the vegetables and olives.
  9. Drizzle with the remaining tablespoon of olive oil and season with additional salt and pepper if desired.
  10. Bake in the preheated oven for 12-15 minutes or until the cheese is melted and bubbly, and the edges of the msemen are golden brown.
  11. Remove from the oven, garnish with fresh basil leaves, slice, and serve warm.
