Ingredients

  • Bell peppers - 1 red, 1 yellow, cut into 2 cm pieces
  • Zucchini - 1 medium, sliced into 1 cm rounds
  • Cherry tomatoes - 10, whole
  • Red onion - 1 small, cut into wedges
  • Firm tofu - 200 grams, pressed and cut into cubes
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cilantro - 2 tablespoons, chopped (for garnish)
  • Wooden skewers - 4, soaked in water for 30 minutes

Steps

  1. In a bowl, combine olive oil, lemon juice, cumin, paprika, cinnamon, salt, and black pepper to create a marinade.
  2. Add the tofu cubes and all the vegetables (bell peppers, zucchini, cherry tomatoes, and red onion) to the marinade, and toss to coat evenly. Let it marinate for at least 15 minutes.
  3. Preheat your grill or grill pan over medium-high heat.
  4. Thread the marinated vegetables and tofu onto the soaked wooden skewers, alternating between different ingredients.
  5. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the vegetables are tender and a bit charred.
  6. Remove from the grill and garnish with chopped cilantro before serving.
