Ingredients

  • Zucchini - 1 medium, sliced
  • Carrot - 1 medium, sliced
  • Bell pepper - 1, diced
  • Red onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Chickpeas - 100 grams, cooked
  • Tomato - 1 medium, chopped
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 200 ml
  • Fresh parsley - a handful, chopped

Steps

  1. Heat olive oil in a tajine or a heavy-bottom pot over medium heat.
  2. Add chopped red onion and minced garlic; sauté until the onion is translucent, about 5 minutes.
  3. Stir in the sliced carrot, zucchini, and diced bell pepper, cooking for another 5 minutes.
  4. Add the chopped tomato, cooked chickpeas, cumin, cinnamon, paprika, salt, and black pepper; mix well.
  5. Pour in the vegetable broth, bring to a simmer, then cover and reduce heat to low.
  6. Let the tajine cook for 25-30 minutes, stirring occasionally, until the vegetables are tender.
  7. Remove from heat, garnish with chopped parsley, and serve hot.
