- Zucchini - 1 medium, sliced
- Carrot - 1 medium, sliced
- Bell pepper - 1, diced
- Red onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Chickpeas - 100 grams, cooked
- Tomato - 1 medium, chopped
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable broth - 200 ml
- Fresh parsley - a handful, chopped
Steps
- Heat olive oil in a tajine or a heavy-bottom pot over medium heat.
- Add chopped red onion and minced garlic; sauté until the onion is translucent, about 5 minutes.
- Stir in the sliced carrot, zucchini, and diced bell pepper, cooking for another 5 minutes.
- Add the chopped tomato, cooked chickpeas, cumin, cinnamon, paprika, salt, and black pepper; mix well.
- Pour in the vegetable broth, bring to a simmer, then cover and reduce heat to low.
- Let the tajine cook for 25-30 minutes, stirring occasionally, until the vegetables are tender.
- Remove from heat, garnish with chopped parsley, and serve hot.
