Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Chickpeas - 1 can (400g), rinsed and drained
  • Diced tomatoes - 1 can (400g)
  • Vegetable broth - 500 ml
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)
  • Lemon - 1, juiced

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and sauté for 3-4 minutes until translucent.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the diced carrot and celery, cooking for 5 minutes until slightly softened.
  5. Mix in the diced zucchini and red bell pepper, cooking for another 3-4 minutes.
  6. Add the rinsed chickpeas, diced tomatoes, vegetable broth, cumin, coriander, paprika, turmeric, cinnamon, salt, and black pepper. Stir well to combine.
  7. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, allowing the flavors to meld together.
  8. Remove from heat and stir in the lemon juice.
  9. Serve hot, garnished with chopped fresh cilantro.
