- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Zucchini - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Chickpeas - 1 can (400g), rinsed and drained
- Diced tomatoes - 1 can (400g)
- Vegetable broth - 500 ml
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Cinnamon - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
- Lemon - 1, juiced
Steps
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and sauté for 3-4 minutes until translucent.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the diced carrot and celery, cooking for 5 minutes until slightly softened.
- Mix in the diced zucchini and red bell pepper, cooking for another 3-4 minutes.
- Add the rinsed chickpeas, diced tomatoes, vegetable broth, cumin, coriander, paprika, turmeric, cinnamon, salt, and black pepper. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, allowing the flavors to meld together.
- Remove from heat and stir in the lemon juice.
- Serve hot, garnished with chopped fresh cilantro.
