Ingredients

  • Basmati rice - 150 grams
  • Water - 400 ml
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Chickpeas - 100 grams, cooked or canned, rinsed
  • Tomato - 1 medium, chopped
  • Ras el Hanout spice blend - 1 tablespoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium saucepan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the diced carrot, zucchini, and red bell pepper to the pan. Sauté for about 5-7 minutes until the vegetables begin to soften.
  5. Add the cooked chickpeas, chopped tomato, ras el hanout, cinnamon, salt, and black pepper. Stir to combine and cook for an additional 3-4 minutes.
  6. Drain the soaked rice and add it to the vegetable mixture, stirring well to coat the rice with the spices.
  7. Pour in 400 ml of water, bring to a boil, then reduce the heat to low. Cover the saucepan and simmer for 15 minutes or until the rice is tender and the water is absorbed.
  8. Remove from heat and let it sit covered for another 5 minutes before fluffing the rice with a fork.
  9. Serve hot, garnished with fresh cilantro.
