Ingredients
- Basmati rice - 150 grams
- Water - 400 ml
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Chickpeas - 100 grams, cooked or canned, rinsed
- Tomato - 1 medium, chopped
- Ras el Hanout spice blend - 1 tablespoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium saucepan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced carrot, zucchini, and red bell pepper to the pan. Sauté for about 5-7 minutes until the vegetables begin to soften.
- Add the cooked chickpeas, chopped tomato, ras el hanout, cinnamon, salt, and black pepper. Stir to combine and cook for an additional 3-4 minutes.
- Drain the soaked rice and add it to the vegetable mixture, stirring well to coat the rice with the spices.
- Pour in 400 ml of water, bring to a boil, then reduce the heat to low. Cover the saucepan and simmer for 15 minutes or until the rice is tender and the water is absorbed.
- Remove from heat and let it sit covered for another 5 minutes before fluffing the rice with a fork.
- Serve hot, garnished with fresh cilantro.
