Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, tapioca flour, olive oil, egg, and salt. Mix until a dough forms.
- Place the dough between two pieces of parchment paper and roll it out to a 10-inch circle. Remove the top parchment paper and transfer the dough to a baking sheet.
- In a skillet over medium heat, add olive oil and sauté the garlic and red onion until fragrant and translucent, about 3-4 minutes.
- Add the zucchini, red bell pepper, and carrot to the skillet. Cook for another 5-7 minutes until the vegetables are tender.
- Stir in the cumin, coriander, paprika, cinnamon, and cooked chickpeas. Cook for an additional 2 minutes, then remove from heat.
- Spread the vegetable mixture evenly over the pizza crust.
- Bake the pizza in the preheated oven for 20-25 minutes, or until the crust is golden and crispy.
- Remove from the oven, drizzle with lemon juice, and garnish with fresh cilantro before serving.
