Vegetable Mrouzia

- Basmati rice - 150 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Chickpeas - 100 grams, canned, drained and rinsed
- Raisins - 50 grams
- Almonds - 30 grams, toasted and roughly chopped
- Vegetable broth - 400 milliliters
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Ground ginger - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the diced carrot, zucchini, and red bell pepper to the pot, and cook for another 5 minutes until the vegetables start to soften.
- Stir in the ground cumin, cinnamon, ginger, turmeric, salt, and black pepper, cooking for 1 minute until fragrant.
- Add the drained chickpeas, raisins, and toasted almonds to the pot, mixing well with the vegetables.
- Pour in the vegetable broth and bring to a boil. Once boiling, add the soaked and drained basmati rice, stirring gently.
- Reduce the heat to low, cover the pot, and let it simmer for about 15 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh cilantro before serving.
