Ingredients

  • Basmati rice - 150 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Chickpeas - 100 grams, canned, drained and rinsed
  • Raisins - 50 grams
  • Almonds - 30 grams, toasted and roughly chopped
  • Vegetable broth - 400 milliliters
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the diced carrot, zucchini, and red bell pepper to the pot, and cook for another 5 minutes until the vegetables start to soften.
  4. Stir in the ground cumin, cinnamon, ginger, turmeric, salt, and black pepper, cooking for 1 minute until fragrant.
  5. Add the drained chickpeas, raisins, and toasted almonds to the pot, mixing well with the vegetables.
  6. Pour in the vegetable broth and bring to a boil. Once boiling, add the soaked and drained basmati rice, stirring gently.
  7. Reduce the heat to low, cover the pot, and let it simmer for about 15 minutes, or until the rice is cooked and the liquid is absorbed.
  8. Remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork before serving.
  9. Garnish with fresh cilantro before serving.
