Vegetable Kefta

Ingredients

  • Zucchini - 100 grams, grated
  • Carrot - 100 grams, grated
  • Red bell pepper - 50 grams, finely chopped
  • Onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 30 grams, chopped
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpea flour - 60 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. In a large mixing bowl, combine the grated zucchini, grated carrot, chopped red bell pepper, chopped onion, minced garlic, and chopped parsley.
  2. Add the cumin powder, paprika, coriander powder, salt, black pepper, and chickpea flour to the vegetable mixture. Mix well until all ingredients are thoroughly combined.
  3. Drizzle in the olive oil and lemon juice, then mix until the mixture holds together. If it's too wet, add a little more chickpea flour.
  4. Divide the mixture into 4 equal portions and shape each portion into a cylindrical skewer shape, about 10 cm long.
  5. Preheat a BBQ grill or grill pan over medium heat. Lightly oil the grill grates to prevent sticking.
  6. Place the vegetable keftas on the grill and cook for about 4-5 minutes on each side, or until they are golden brown and cooked through.
  7. Once cooked, remove from the grill and serve immediately with a side of tahini sauce or yogurt, and enjoy!
