- Couscous - 1 cup
- Water - 1.5 cups
- Olive oil - 2 tablespoons
- Zucchini - 1 small, diced
- Red bell pepper - 1 small, diced
- Carrot - 1 medium, grated
- Chickpeas - 1/2 cup, cooked
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Pepper - to taste
- Tomato sauce - 1/2 cup
- Feta cheese (optional) - 50 grams, crumbled
Steps
- In a medium saucepan, bring 1.5 cups of water to a boil. Add the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the diced zucchini, red bell pepper, and grated carrot to the skillet. Sauté for about 5-7 minutes until vegetables are tender.
- Stir in the cooked chickpeas, cumin, cinnamon, paprika, salt, and pepper. Cook for an additional 2-3 minutes, mixing well.
- In a large bowl, combine the fluffed couscous with the sautéed vegetable mixture and chopped parsley. Mix until evenly combined.
- Preheat the oven to 200°C (392°F). Line a baking tray with parchment paper.
- Spread the couscous mixture onto the prepared baking tray, forming a round pizza shape about 1 cm thick.
- Bake in the preheated oven for 15 minutes or until the edges are golden.
- Remove from the oven and spread tomato sauce evenly over the top. If desired, sprinkle crumbled feta cheese on top.
- Return to the oven and bake for an additional 5-7 minutes until the sauce is heated through and the cheese is slightly melted.
- Let it cool for a few minutes before slicing and serving.
