Ingredients

  • Couscous - 1 cup
  • Water - 1.5 cups
  • Olive oil - 2 tablespoons
  • Zucchini - 1 small, diced
  • Red bell pepper - 1 small, diced
  • Carrot - 1 medium, grated
  • Chickpeas - 1/2 cup, cooked
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Pepper - to taste
  • Tomato sauce - 1/2 cup
  • Feta cheese (optional) - 50 grams, crumbled

Steps

  1. In a medium saucepan, bring 1.5 cups of water to a boil. Add the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add the diced zucchini, red bell pepper, and grated carrot to the skillet. Sauté for about 5-7 minutes until vegetables are tender.
  4. Stir in the cooked chickpeas, cumin, cinnamon, paprika, salt, and pepper. Cook for an additional 2-3 minutes, mixing well.
  5. In a large bowl, combine the fluffed couscous with the sautéed vegetable mixture and chopped parsley. Mix until evenly combined.
  6. Preheat the oven to 200°C (392°F). Line a baking tray with parchment paper.
  7. Spread the couscous mixture onto the prepared baking tray, forming a round pizza shape about 1 cm thick.
  8. Bake in the preheated oven for 15 minutes or until the edges are golden.
  9. Remove from the oven and spread tomato sauce evenly over the top. If desired, sprinkle crumbled feta cheese on top.
  10. Return to the oven and bake for an additional 5-7 minutes until the sauce is heated through and the cheese is slightly melted.
  11. Let it cool for a few minutes before slicing and serving.
