Ingredients

  • Couscous - 100 grams
  • Pasta (fusilli or penne) - 100 grams
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Carrot - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, chopped
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 250 milliliters
  • Chickpeas (canned or cooked) - 100 grams, drained
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a medium pot, bring 250ml of vegetable broth to a boil.
  2. Add couscous to the boiling broth, stir, cover, and remove from heat. Let it sit for 5 minutes.
  3. Meanwhile, in a large skillet, heat 2 tablespoons of olive oil over medium heat.
  4. Add chopped onion and minced garlic to the skillet and sauté until translucent, about 3-4 minutes.
  5. Add the diced red bell pepper, zucchini, and carrot to the skillet. Cook for 5-7 minutes until vegetables are tender.
  6. Stir in the cumin, coriander, paprika, salt, and black pepper. Cook for another 2 minutes to toast the spices.
  7. Add the cooked chickpeas to the skillet and mix well. Cook for an additional 2-3 minutes until heated through.
  8. Fluff the couscous with a fork and add it to the vegetable mixture. Stir to combine.
  9. Remove from heat and add fresh parsley and lemon juice. Toss everything together and adjust seasoning if necessary.
