Ingredients

  • Zucchini - 1 medium, cut into thick slices
  • Bell pepper (red or yellow) - 1, cut into chunks
  • Red onion - 1 small, cut into wedges
  • Cherry tomatoes - 200 grams
  • Firm tofu - 200 grams, pressed and cut into cubes
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)
  • Lemon - 1, cut into wedges (for serving)

Steps

  1. In a bowl, combine olive oil, ground cumin, ground coriander, paprika, garlic powder, salt, and black pepper to create a marinade.
  2. Add the tofu cubes, zucchini slices, bell pepper chunks, red onion wedges, and cherry tomatoes to the marinade and toss until evenly coated.
  3. Cover the bowl with plastic wrap and let the mixture marinate in the refrigerator for at least 15 minutes.
  4. Preheat the grill or a grill pan over medium-high heat.
  5. Thread the marinated vegetables and tofu onto skewers, alternating between different ingredients.
  6. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  7. Remove from the grill and let them rest for a few minutes.
  8. Serve the vegetable brochettes with lemon wedges and garnish with fresh parsley.
