- Cherry tomatoes - 200 grams
- Firm tofu - 200 grams, pressed and cut into cubes
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Garlic powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
- Lemon - 1, cut into wedges (for serving)
Steps
- In a bowl, combine olive oil, ground cumin, ground coriander, paprika, garlic powder, salt, and black pepper to create a marinade.
- Add the tofu cubes, zucchini slices, bell pepper chunks, red onion wedges, and cherry tomatoes to the marinade and toss until evenly coated.
- Cover the bowl with plastic wrap and let the mixture marinate in the refrigerator for at least 15 minutes.
- Preheat the grill or a grill pan over medium-high heat.
- Thread the marinated vegetables and tofu onto skewers, alternating between different ingredients.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
- Remove from the grill and let them rest for a few minutes.
- Serve the vegetable brochettes with lemon wedges and garnish with fresh parsley.
