Ingredients
- Wonton wrappers - 12 pieces
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, grated
- Zucchini - 1 small, grated
- Bell pepper - 1/2, finely chopped
- Spinach - 100 grams, chopped
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 teaspoon
Steps
- Heat the olive oil in a skillet over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 3-4 minutes.
- Add the grated carrot, zucchini, and bell pepper to the skillet. Sauté for another 5-7 minutes until the vegetables are tender.
- Stir in the chopped spinach, cumin, paprika, salt, and black pepper. Cook for an additional 2-3 minutes until the spinach wilts. Remove from heat and stir in the chopped cilantro and lemon juice.
- Lay a wonton wrapper on a clean surface. Place about 1 tablespoon of the vegetable filling in the center of the wrapper.
- Fold the wrapper diagonally to form a triangle, sealing the edges by pressing with your fingers. Optionally, you can use a little water to help seal the edges.
- Repeat the process with the remaining wrappers and filling.
- Heat a pan with enough olive oil to shallow fry over medium heat. Fry the briouats in batches for about 2-3 minutes on each side until golden and crispy.
- Remove from the oil and drain on paper towels. Serve warm.
