Ingredients
- Phyllo dough - 6 sheets
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, grated
- Zucchini - 1 medium, grated
- Red bell pepper - 1 medium, diced
- Chickpeas - 200 grams, cooked and drained
- Raisins - 50 grams
- Almonds - 30 grams, chopped
- Cinnamon - 1 teaspoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Fresh cilantro - 2 tablespoons, chopped
- Powdered sugar - for dusting (optional)
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat the olive oil over medium heat and sauté the onion until translucent, about 5 minutes.
- Add the garlic, carrot, zucchini, and red bell pepper, and cook for another 5-7 minutes until the vegetables are tender.
- Stir in the chickpeas, raisins, chopped almonds, cinnamon, cumin, paprika, salt, black pepper, parsley, and cilantro. Cook for an additional 5 minutes to blend the flavors. Remove from heat and let cool slightly.
- Lay one sheet of phyllo dough on a clean surface and brush with olive oil. Layer another sheet on top and brush with oil again. Repeat for a total of three layers.
- Place half of the vegetable mixture in the center of the phyllo layers, fold the edges over the filling, and shape it into a round pastry. Repeat with the remaining phyllo and filling.
- Place the bastillas on a baking sheet lined with parchment paper and brush the tops with olive oil.
- Bake in the preheated oven for 25-30 minutes or until golden brown and crispy.
- Once baked, remove from the oven and allow to cool for a few minutes. Dust with powdered sugar if desired before serving.
