Ingredients

  • Phyllo dough - 6 sheets
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, grated
  • Zucchini - 1 medium, grated
  • Red bell pepper - 1 medium, diced
  • Chickpeas - 200 grams, cooked and drained
  • Raisins - 50 grams
  • Almonds - 30 grams, chopped
  • Cinnamon - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Powdered sugar - for dusting (optional)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat and sauté the onion until translucent, about 5 minutes.
  3. Add the garlic, carrot, zucchini, and red bell pepper, and cook for another 5-7 minutes until the vegetables are tender.
  4. Stir in the chickpeas, raisins, chopped almonds, cinnamon, cumin, paprika, salt, black pepper, parsley, and cilantro. Cook for an additional 5 minutes to blend the flavors. Remove from heat and let cool slightly.
  5. Lay one sheet of phyllo dough on a clean surface and brush with olive oil. Layer another sheet on top and brush with oil again. Repeat for a total of three layers.
  6. Place half of the vegetable mixture in the center of the phyllo layers, fold the edges over the filling, and shape it into a round pastry. Repeat with the remaining phyllo and filling.
  7. Place the bastillas on a baking sheet lined with parchment paper and brush the tops with olive oil.
  8. Bake in the preheated oven for 25-30 minutes or until golden brown and crispy.
  9. Once baked, remove from the oven and allow to cool for a few minutes. Dust with powdered sugar if desired before serving.
