Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Carrot - 1 large, sliced
  • Zucchini - 1 medium, chopped
  • Red bell pepper - 1 medium, diced
  • Chickpeas - 1 can (400g), drained and rinsed
  • Diced tomatoes - 1 can (400g)
  • Vegetable broth - 250 ml
  • Raisins - 50 grams
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot or tagine over medium heat.
  2. Add the diced onion and cook for about 5 minutes, until translucent.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the sliced carrot, chopped zucchini, and diced red bell pepper, cooking for another 5-7 minutes, until slightly tender.
  5. Mix in the chickpeas, diced tomatoes, vegetable broth, raisins, and all the spices (cumin, coriander, cinnamon, turmeric, paprika).
  6. Season with salt and black pepper to taste, then bring the mixture to a gentle simmer.
  7. Cover the pot and let it cook for about 20 minutes, stirring occasionally, until the vegetables are tender and the flavors meld together.
  8. Remove from heat and let it sit for a few minutes before serving.
  9. Garnish with fresh parsley and serve hot with warm bread or couscous.
