Ingredients
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Carrot - 1 large, sliced
- Zucchini - 1 medium, chopped
- Red bell pepper - 1 medium, diced
- Chickpeas - 1 can (400g), drained and rinsed
- Diced tomatoes - 1 can (400g)
- Vegetable broth - 250 ml
- Raisins - 50 grams
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large pot or tagine over medium heat.
- Add the diced onion and cook for about 5 minutes, until translucent.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the sliced carrot, chopped zucchini, and diced red bell pepper, cooking for another 5-7 minutes, until slightly tender.
- Mix in the chickpeas, diced tomatoes, vegetable broth, raisins, and all the spices (cumin, coriander, cinnamon, turmeric, paprika).
- Season with salt and black pepper to taste, then bring the mixture to a gentle simmer.
- Cover the pot and let it cook for about 20 minutes, stirring occasionally, until the vegetables are tender and the flavors meld together.
- Remove from heat and let it sit for a few minutes before serving.
- Garnish with fresh parsley and serve hot with warm bread or couscous.
