Vegan Mechoui
Vegan Mechoui is a vibrant Moroccan-inspired dish that captures the essence of traditional seafood flavors using plant-based ingredients. This dish features marinated jackfruit, artfully spiced and grilled, served with a zesty citrus sauce and a side of aromatic couscous.

- Young green jackfruit - 400 grams, drained and rinsed
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Couscous - 150 grams
- Vegetable broth - 250 ml
- Cherry tomatoes - 100 grams, halved
- Cucumber - 1 small, diced
- Red onion - 1/4, finely chopped
- Olives - 50 grams, pitted and sliced
Steps
- In a bowl, combine the olive oil, minced garlic, cumin, smoked paprika, coriander, salt, black pepper, and lemon juice. Mix well to create a marinade.
- Add the drained jackfruit to the marinade, ensuring it is well coated. Let it marinate for at least 30 minutes.
- While the jackfruit is marinating, prepare the couscous. In a saucepan, bring the vegetable broth to a boil. Remove from heat, add couscous, cover, and let it sit for 5 minutes.
- After the couscous has absorbed the broth, fluff it with a fork and mix in the chopped parsley, halved cherry tomatoes, diced cucumber, and red onion. Set aside.
- Preheat a grill or grill pan over medium heat. Once hot, place the marinated jackfruit on the grill and cook for about 5-7 minutes on each side, until nicely charred.
- Remove the jackfruit from the grill and shred it with a fork to create a pulled texture.
- Serve the grilled jackfruit on a plate alongside the couscous salad and garnish with sliced olives.
