Vegan Mechoui

Vegan Mechoui is a vibrant Moroccan-inspired dish that captures the essence of traditional seafood flavors using plant-based ingredients. This dish features marinated jackfruit, artfully spiced and grilled, served with a zesty citrus sauce and a side of aromatic couscous.

Ingredients

  • Young green jackfruit - 400 grams, drained and rinsed
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Couscous - 150 grams
  • Vegetable broth - 250 ml
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 small, diced
  • Red onion - 1/4, finely chopped
  • Olives - 50 grams, pitted and sliced

Steps

  1. In a bowl, combine the olive oil, minced garlic, cumin, smoked paprika, coriander, salt, black pepper, and lemon juice. Mix well to create a marinade.
  2. Add the drained jackfruit to the marinade, ensuring it is well coated. Let it marinate for at least 30 minutes.
  3. While the jackfruit is marinating, prepare the couscous. In a saucepan, bring the vegetable broth to a boil. Remove from heat, add couscous, cover, and let it sit for 5 minutes.
  4. After the couscous has absorbed the broth, fluff it with a fork and mix in the chopped parsley, halved cherry tomatoes, diced cucumber, and red onion. Set aside.
  5. Preheat a grill or grill pan over medium heat. Once hot, place the marinated jackfruit on the grill and cook for about 5-7 minutes on each side, until nicely charred.
  6. Remove the jackfruit from the grill and shred it with a fork to create a pulled texture.
  7. Serve the grilled jackfruit on a plate alongside the couscous salad and garnish with sliced olives.
