Vegan Kefta
Vegan Kefta is a flavorful Moroccan dish made from spiced chickpeas and herbs, grilled to perfection for a smoky BBQ experience. Perfectly served with a refreshing salad or in pita bread, this dish is both satisfying and nutritious.

Ingredients
- Canned chickpeas - 400 grams, drained and rinsed
- Red onion - 1 medium, finely chopped
- Fresh parsley - 30 grams, finely chopped
- Fresh cilantro - 30 grams, finely chopped
- Garlic - 3 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Breadcrumbs - 50 grams
- Skewers - 4 (soaked in water if wooden)
Steps
- In a large mixing bowl, mash the drained chickpeas with a fork or potato masher until mostly smooth with some texture remaining.
- Add the finely chopped red onion, parsley, cilantro, minced garlic, cumin, coriander, paprika, salt, pepper, olive oil, and breadcrumbs to the mashed chickpeas.
- Mix all the ingredients together until well combined. If the mixture is too wet, add more breadcrumbs until it holds together.
- Divide the mixture into 4 equal portions and shape each portion around a skewer to form a long, flat kefta.
- Preheat a grill or BBQ to medium-high heat. Lightly oil the grill grates to prevent sticking.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the kefta are golden brown and heated through.
- Remove from the grill and let rest for a couple of minutes before serving.
