Ingredients
- All-purpose flour - 200 grams
- Warm water - 120 ml
- Active dry yeast - 5 grams
- Olive oil - 10 ml
- Salt - 5 grams
- Ground beef - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Harissa paste - 1 tablespoon
- Bell pepper - 1 small, diced
- Tomato - 1 medium, diced
- Egg - 1 large
- Fresh parsley - 2 tablespoons, chopped
- Black olives - 50 grams, sliced
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Pepper - to taste
Steps
- In a bowl, combine warm water and active dry yeast; let it sit for 5 minutes until frothy.
- In a large mixing bowl, mix the flour and salt. Make a well in the center and add the yeast mixture and olive oil. Stir until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place it in a lightly greased bowl, cover, and let it rise for 30 minutes or until doubled in size.
- While the dough is rising, prepare the topping. In a skillet, heat a little olive oil over medium heat, add the chopped onion and garlic, sautéing until translucent.
- Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned, then stir in the harissa paste, cumin, paprika, diced bell pepper, and diced tomato. Cook for an additional 5 minutes until the vegetables are softened. Season with pepper to taste.
- Preheat your oven to 220°C (430°F).
- Once the dough has risen, punch it down and roll it out into a round shape to fit your baking tray.
- Transfer the dough to a baking sheet lined with parchment paper. Spread the beef mixture evenly over the dough.
- In a bowl, beat the egg and brush it over the exposed dough edges for a golden finish. Sprinkle the chopped parsley and sliced olives on top.
- Bake in the preheated oven for about 15-20 minutes, or until the crust is golden and cooked through.
- Remove from the oven and let it cool for a few minutes before slicing. Serve warm.
