Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Active dry yeast - 5 grams
  • Olive oil - 10 ml
  • Salt - 5 grams
  • Ground beef - 150 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Harissa paste - 1 tablespoon
  • Bell pepper - 1 small, diced
  • Tomato - 1 medium, diced
  • Egg - 1 large
  • Fresh parsley - 2 tablespoons, chopped
  • Black olives - 50 grams, sliced
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Pepper - to taste

Steps

  1. In a bowl, combine warm water and active dry yeast; let it sit for 5 minutes until frothy.
  2. In a large mixing bowl, mix the flour and salt. Make a well in the center and add the yeast mixture and olive oil. Stir until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place it in a lightly greased bowl, cover, and let it rise for 30 minutes or until doubled in size.
  4. While the dough is rising, prepare the topping. In a skillet, heat a little olive oil over medium heat, add the chopped onion and garlic, sautéing until translucent.
  5. Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned, then stir in the harissa paste, cumin, paprika, diced bell pepper, and diced tomato. Cook for an additional 5 minutes until the vegetables are softened. Season with pepper to taste.
  6. Preheat your oven to 220°C (430°F).
  7. Once the dough has risen, punch it down and roll it out into a round shape to fit your baking tray.
  8. Transfer the dough to a baking sheet lined with parchment paper. Spread the beef mixture evenly over the dough.
  9. In a bowl, beat the egg and brush it over the exposed dough edges for a golden finish. Sprinkle the chopped parsley and sliced olives on top.
  10. Bake in the preheated oven for about 15-20 minutes, or until the crust is golden and cooked through.
  11. Remove from the oven and let it cool for a few minutes before slicing. Serve warm.
