Ingredients

  • ground lamb - 300 grams
  • ground beef - 100 grams
  • garlic - 2 cloves, minced
  • cumin - 1 teaspoon
  • coriander - 1 teaspoon
  • paprika - 1 teaspoon
  • cayenne pepper - 1/2 teaspoon
  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • fennel seeds - 1/2 teaspoon, crushed
  • fresh parsley - 2 tablespoons, chopped
  • olive oil - 1 tablespoon
  • natural sheep casings - 1 meter (optional)

Steps

  1. In a large bowl, combine the ground lamb and ground beef.
  2. Add minced garlic, cumin, coriander, paprika, cayenne pepper, salt, black pepper, crushed fennel seeds, and chopped parsley to the meat mixture.
  3. Mix everything thoroughly with your hands until well combined, then cover and refrigerate for at least 30 minutes to let the flavors meld.
  4. If using natural sheep casings, rinse them well under cold water and soak them in water for about 30 minutes.
  5. Stuff the sausage mixture into the casings, twisting them into 10 cm links, or form patties if not using casings.
  6. Heat a grill or grill pan over medium-high heat and brush with olive oil.
  7. Grill the merguez sausages for about 10-12 minutes, turning occasionally, until they are cooked through and have nice grill marks.
  8. Remove from the grill and let them rest for a few minutes before serving.
