Ingredients
- ground lamb - 300 grams
- ground beef - 100 grams
- garlic - 2 cloves, minced
- cumin - 1 teaspoon
- coriander - 1 teaspoon
- paprika - 1 teaspoon
- cayenne pepper - 1/2 teaspoon
- salt - 1 teaspoon
- black pepper - 1/2 teaspoon
- fennel seeds - 1/2 teaspoon, crushed
- fresh parsley - 2 tablespoons, chopped
- olive oil - 1 tablespoon
- natural sheep casings - 1 meter (optional)
Steps
- In a large bowl, combine the ground lamb and ground beef.
- Add minced garlic, cumin, coriander, paprika, cayenne pepper, salt, black pepper, crushed fennel seeds, and chopped parsley to the meat mixture.
- Mix everything thoroughly with your hands until well combined, then cover and refrigerate for at least 30 minutes to let the flavors meld.
- If using natural sheep casings, rinse them well under cold water and soak them in water for about 30 minutes.
- Stuff the sausage mixture into the casings, twisting them into 10 cm links, or form patties if not using casings.
- Heat a grill or grill pan over medium-high heat and brush with olive oil.
- Grill the merguez sausages for about 10-12 minutes, turning occasionally, until they are cooked through and have nice grill marks.
- Remove from the grill and let them rest for a few minutes before serving.
