Ingredients

  • Brik pastry sheets - 2
  • Olive oil - 2 tablespoons
  • Mozzarella cheese, shredded - 150 grams
  • Tomato sauce - 100 grams
  • Bell pepper, diced - 1/2
  • Red onion, thinly sliced - 1/4
  • Black olives, pitted and sliced - 50 grams
  • Chorizo or spicy sausage, sliced - 50 grams
  • Fresh basil leaves - a handful
  • Salt - to taste
  • Black pepper - to taste
  • Chili flakes - optional, to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, combine the diced bell pepper, sliced red onion, black olives, and chorizo. Season with salt, black pepper, and chili flakes if using.
  3. Lay one brik pastry sheet on a baking tray lined with parchment paper. Brush lightly with olive oil.
  4. Spread half of the tomato sauce evenly over the brik pastry.
  5. Sprinkle half of the mozzarella cheese on top of the sauce.
  6. Add half of the vegetable and chorizo mixture over the cheese.
  7. Garnish with fresh basil leaves.
  8. Cover with another brik pastry sheet and press gently to seal the edges.
  9. Repeat the process for the second brik pizza.
  10. Brush the top of each brik pizza with olive oil.
  11. Bake in the preheated oven for about 15-20 minutes, or until golden brown and crispy.
  12. Remove from the oven, let cool for a minute, then slice and serve hot.
