- Brik pastry sheets - 2
- Olive oil - 2 tablespoons
- Mozzarella cheese, shredded - 150 grams
- Tomato sauce - 100 grams
- Bell pepper, diced - 1/2
- Red onion, thinly sliced - 1/4
- Black olives, pitted and sliced - 50 grams
- Chorizo or spicy sausage, sliced - 50 grams
- Fresh basil leaves - a handful
- Salt - to taste
- Black pepper - to taste
- Chili flakes - optional, to taste
Steps
- Preheat your oven to 200°C (400°F).
- In a mixing bowl, combine the diced bell pepper, sliced red onion, black olives, and chorizo. Season with salt, black pepper, and chili flakes if using.
- Lay one brik pastry sheet on a baking tray lined with parchment paper. Brush lightly with olive oil.
- Spread half of the tomato sauce evenly over the brik pastry.
- Sprinkle half of the mozzarella cheese on top of the sauce.
- Add half of the vegetable and chorizo mixture over the cheese.
- Garnish with fresh basil leaves.
- Cover with another brik pastry sheet and press gently to seal the edges.
- Repeat the process for the second brik pizza.
- Brush the top of each brik pizza with olive oil.
- Bake in the preheated oven for about 15-20 minutes, or until golden brown and crispy.
- Remove from the oven, let cool for a minute, then slice and serve hot.
