Ingredients

  • Ripe tomatoes - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, diced
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Vegetable broth - 500 ml

Steps

  1. Start by washing and chopping the ripe tomatoes into small pieces.
  2. In a pot, heat the olive oil over medium heat, then add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the diced red bell pepper to the pot and cook for 3-4 minutes until softened.
  4. Stir in the chopped tomatoes, cumin powder, paprika, salt, and black pepper. Cook for another 5 minutes, stirring occasionally.
  5. Pour in the vegetable broth and bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
  6. Once the tomatoes are soft, use an immersion blender to puree the soup until smooth (or transfer to a blender in batches).
  7. Stir in the fresh parsley and adjust seasoning if needed.
  8. Serve hot, garnished with extra parsley if desired.
