- Ripe tomatoes - 400 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red bell pepper - 1 medium, diced
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Vegetable broth - 500 ml
Steps
- Start by washing and chopping the ripe tomatoes into small pieces.
- In a pot, heat the olive oil over medium heat, then add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced red bell pepper to the pot and cook for 3-4 minutes until softened.
- Stir in the chopped tomatoes, cumin powder, paprika, salt, and black pepper. Cook for another 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
- Once the tomatoes are soft, use an immersion blender to puree the soup until smooth (or transfer to a blender in batches).
- Stir in the fresh parsley and adjust seasoning if needed.
- Serve hot, garnished with extra parsley if desired.
