Ingredients

  • Ripe tomatoes - 500 grams
  • Red bell pepper - 1 medium, chopped
  • Yellow onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, chopped red bell pepper, and diced carrot to the pot. Cook for an additional 5 minutes until the vegetables soften.
  3. Stir in the ground cumin, ground coriander, paprika, and cinnamon. Cook the spices for 1 minute to release their aromas.
  4. Chop the ripe tomatoes and add them to the pot along with the vegetable broth. Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes.
  5. Once the tomatoes are soft, use an immersion blender to purée the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.
  6. Season with salt and black pepper to taste. If the soup is too thick, add a little more vegetable broth to reach your desired consistency.
  7. Serve hot, garnished with fresh cilantro.
