- Ripe tomatoes - 500 grams
- Red bell pepper - 1 medium, chopped
- Yellow onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1/2 teaspoon
- Cinnamon - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, chopped red bell pepper, and diced carrot to the pot. Cook for an additional 5 minutes until the vegetables soften.
- Stir in the ground cumin, ground coriander, paprika, and cinnamon. Cook the spices for 1 minute to release their aromas.
- Chop the ripe tomatoes and add them to the pot along with the vegetable broth. Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes.
- Once the tomatoes are soft, use an immersion blender to purée the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.
- Season with salt and black pepper to taste. If the soup is too thick, add a little more vegetable broth to reach your desired consistency.
- Serve hot, garnished with fresh cilantro.
