- Paprika - 1 teaspoon

- Fresh parsley, chopped - 2 tablespoons

Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the chopped tomatoes, cumin, paprika, cinnamon, salt, and black pepper. Cook for about 5 minutes, allowing the tomatoes to break down and create a sauce.
- Drain the soaked rice and add it to the saucepan, stirring well to combine with the tomato mixture.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes or until the rice is cooked and has absorbed the liquid.
- Remove from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, then stir in the chopped parsley and lemon juice before serving.
