Ingredients

  • Basmati rice - 150 grams
  • Tomatoes, chopped - 400 grams
  • Onion, finely chopped - 1 medium
  • Garlic cloves, minced - 2
  • Vegetable broth - 300 ml
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the chopped tomatoes, cumin, paprika, cinnamon, salt, and black pepper. Cook for about 5 minutes, allowing the tomatoes to break down and create a sauce.
  5. Drain the soaked rice and add it to the saucepan, stirring well to combine with the tomato mixture.
  6. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes or until the rice is cooked and has absorbed the liquid.
  7. Remove from heat and let it sit, covered, for an additional 5 minutes.
  8. Fluff the rice with a fork, then stir in the chopped parsley and lemon juice before serving.
