Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Canned diced tomatoes - 400 grams
  • Vegetable broth - 500 milliliters
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - 1/4 cup, chopped
  • Lemon juice - 1 tablespoon
  • Zucchini - 1 medium, diced

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic, diced carrot, and diced celery. Cook for another 5 minutes until the vegetables are slightly softened.
  4. Add the canned diced tomatoes and vegetable broth to the pot, stirring well to combine.
  5. Mix in the ground cumin, ground coriander, cinnamon, paprika, salt, and black pepper. Bring to a simmer.
  6. Add the diced zucchini and continue to simmer for 10-15 minutes until all vegetables are tender.
  7. Remove from heat and stir in the chopped cilantro and lemon juice just before serving.
