- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Canned diced tomatoes - 400 grams
- Vegetable broth - 500 milliliters
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - 1/4 cup, chopped
- Lemon juice - 1 tablespoon
- Zucchini - 1 medium, diced
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic, diced carrot, and diced celery. Cook for another 5 minutes until the vegetables are slightly softened.
- Add the canned diced tomatoes and vegetable broth to the pot, stirring well to combine.
- Mix in the ground cumin, ground coriander, cinnamon, paprika, salt, and black pepper. Bring to a simmer.
- Add the diced zucchini and continue to simmer for 10-15 minutes until all vegetables are tender.
- Remove from heat and stir in the chopped cilantro and lemon juice just before serving.
