- Yellow bell pepper - 1 medium, chopped
- Fresh tomatoes - 500 grams, chopped
- Vegetable broth - 500 ml
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - a handful, chopped (for garnish)
- Lemon juice - 1 tablespoon
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the chopped red and yellow bell peppers and sauté for another 5 minutes until softened.
- Incorporate the chopped fresh tomatoes, ground cumin, ground coriander, smoked paprika, salt, and black pepper. Stir well to combine.
- Pour in the vegetable broth and bring the mixture to a boil.
- Reduce the heat and let the soup simmer for about 15 minutes, allowing the flavors to meld.
- Remove from heat and use an immersion blender to puree the soup to your desired consistency.
- Stir in the lemon juice and adjust seasoning if necessary.
- Serve hot, garnished with chopped fresh cilantro.
