Ingredients

  • Basmati rice - 150 grams
  • Ripe tomatoes - 2 medium (approximately 300 grams), chopped
  • Green olives - 50 grams, sliced
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Vegetable broth - 300 ml
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for about 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped red onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the chopped tomatoes, cumin, paprika, salt, and black pepper. Cook for about 5 minutes until the tomatoes start to break down.
  5. Drain the soaked rice and add it to the saucepan, stirring to combine with the tomato mixture.
  6. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15-20 minutes until the rice is tender and has absorbed the liquid.
  7. Remove the saucepan from heat and stir in the sliced olives and chopped parsley. Let it sit, covered, for another 5 minutes.
