Ingredients
- Basmati rice - 150 grams
- Ripe tomatoes - 2 medium (approximately 300 grams), chopped
- Green olives - 50 grams, sliced
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Vegetable broth - 300 ml
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for about 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped red onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the chopped tomatoes, cumin, paprika, salt, and black pepper. Cook for about 5 minutes until the tomatoes start to break down.
- Drain the soaked rice and add it to the saucepan, stirring to combine with the tomato mixture.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15-20 minutes until the rice is tender and has absorbed the liquid.
- Remove the saucepan from heat and stir in the sliced olives and chopped parsley. Let it sit, covered, for another 5 minutes.
