Ingredients

  • All-purpose flour - 100g
  • Unsalted butter - 50g (cold, cubed)
  • Powdered sugar - 30g
  • Salt - 1/4 tsp
  • Ice water - 2-3 tbsp
  • Milk - 200ml
  • Egg yolks - 2
  • Granulated sugar - 40g
  • Vanilla extract - 1 tsp
  • Cornstarch - 1 tbsp
  • Fresh seasonal fruits (e.g., berries, kiwi, mango) - 150g
  • Mint leaves - for garnish

Steps

  1. In a large bowl, combine the flour, powdered sugar, and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
  2. Gradually add ice water, one tablespoon at a time, until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
  3. Preheat the oven to 180°C (350°F). On a floured surface, roll out the chilled dough to fit a small tart pan (about 20cm in diameter).
  4. Place the rolled dough in the tart pan, trim the edges, and prick the bottom with a fork. Bake for 15-20 minutes or until golden brown. Let it cool.
  5. In a saucepan, heat the milk over medium heat until just steaming. In a separate bowl, whisk together the egg yolks, granulated sugar, cornstarch, and vanilla extract.
  6. Slowly pour the hot milk into the egg mixture while whisking constantly. Return the mixture to the saucepan and cook over low heat, stirring until thickened (about 5 minutes).
  7. Pour the custard into the cooled tart shell and smooth the top. Refrigerate for at least 15 minutes to set.
  8. Once set, top the tart with fresh fruits of your choice and garnish with mint leaves before serving.
