Ingredients
- All-purpose flour - 100g
- Unsalted butter - 50g (cold, cubed)
- Powdered sugar - 30g
- Salt - 1/4 tsp
- Ice water - 2-3 tbsp
- Milk - 200ml
- Egg yolks - 2
- Granulated sugar - 40g
- Vanilla extract - 1 tsp
- Cornstarch - 1 tbsp
- Fresh seasonal fruits (e.g., berries, kiwi, mango) - 150g
- Mint leaves - for garnish
Steps
- In a large bowl, combine the flour, powdered sugar, and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
- Preheat the oven to 180°C (350°F). On a floured surface, roll out the chilled dough to fit a small tart pan (about 20cm in diameter).
- Place the rolled dough in the tart pan, trim the edges, and prick the bottom with a fork. Bake for 15-20 minutes or until golden brown. Let it cool.
- In a saucepan, heat the milk over medium heat until just steaming. In a separate bowl, whisk together the egg yolks, granulated sugar, cornstarch, and vanilla extract.
- Slowly pour the hot milk into the egg mixture while whisking constantly. Return the mixture to the saucepan and cook over low heat, stirring until thickened (about 5 minutes).
- Pour the custard into the cooled tart shell and smooth the top. Refrigerate for at least 15 minutes to set.
- Once set, top the tart with fresh fruits of your choice and garnish with mint leaves before serving.
