Ingredients

  • Red bell pepper - 1 large (about 200g)
  • Green bell pepper - 1 large (about 200g)
  • Tomato - 2 medium (about 300g)
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the red and green bell peppers in half, remove the seeds, and place them cut-side down on a baking sheet.
  3. Roast the peppers in the preheated oven for about 20 minutes, or until the skin is blistered and charred.
  4. While the peppers are roasting, bring a pot of water to a boil and blanch the tomatoes for about 2 minutes.
  5. Remove the tomatoes from the boiling water and place them in an ice bath to cool. Peel the skins off the tomatoes, then chop them finely.
  6. Once the peppers are done roasting, remove them from the oven and let them cool slightly before peeling off the skin.
  7. Chop the roasted peppers into small pieces and combine them with the chopped tomatoes in a mixing bowl.
  8. Stir in the minced garlic, cumin, paprika, olive oil, salt, and black pepper. Mix well to combine all ingredients.
  9. Transfer the mixture to a serving dish, sprinkle with fresh parsley, and serve warm or at room temperature.
