Ingredients
- Red bell pepper - 1 large (about 200g)
- Green bell pepper - 1 large (about 200g)
- Tomato - 2 medium (about 300g)
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- Cut the red and green bell peppers in half, remove the seeds, and place them cut-side down on a baking sheet.
- Roast the peppers in the preheated oven for about 20 minutes, or until the skin is blistered and charred.
- While the peppers are roasting, bring a pot of water to a boil and blanch the tomatoes for about 2 minutes.
- Remove the tomatoes from the boiling water and place them in an ice bath to cool. Peel the skins off the tomatoes, then chop them finely.
- Once the peppers are done roasting, remove them from the oven and let them cool slightly before peeling off the skin.
- Chop the roasted peppers into small pieces and combine them with the chopped tomatoes in a mixing bowl.
- Stir in the minced garlic, cumin, paprika, olive oil, salt, and black pepper. Mix well to combine all ingredients.
- Transfer the mixture to a serving dish, sprinkle with fresh parsley, and serve warm or at room temperature.
