Taktouka
Taktouka is a vibrant Moroccan dish made from roasted peppers and tomatoes, infused with spices and served warm. This vegan breakfast is both hearty and flavorful, perfect for a nutritious start to the day.

Ingredients
- Red bell peppers - 2
- Ripe tomatoes - 3 medium (about 400g)
- Garlic - 2 cloves
- Olive oil - 2 tablespoons
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat your oven to 200°C (400°F).
- Place the red bell peppers on a baking tray and roast them in the oven for about 20 minutes, turning occasionally, until the skins are charred.
- While the peppers are roasting, boil the tomatoes in a pot of water for about 5 minutes until the skins start to split, then remove and peel the tomatoes.
- Chop the peeled tomatoes and set aside.
- Once the peppers are roasted, remove them from the oven, place them in a bowl, and cover with plastic wrap for 5 minutes to steam, making it easier to peel the skin off.
- Peel the skins from the roasted peppers, remove the seeds, and chop them into small pieces.
- In a skillet, heat the olive oil over medium heat, then add minced garlic and sauté until fragrant, about 1 minute.
- Add the chopped tomatoes, roasted peppers, cumin, paprika, salt, and black pepper to the skillet. Cook for about 10 minutes, stirring occasionally, until the mixture is thick and well combined.
- Remove from heat and stir in the chopped cilantro and lemon juice.
- Serve warm, optionally with crusty bread or flatbread.
