Ingredients

  • Chicken thighs - 300 grams
  • Green olives - 100 grams, pitted
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, sliced
  • Bell pepper - 1 medium, sliced
  • Tomato - 1 medium, diced
  • Cilantro - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 250 milliliters

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a tajine pot or a suitable baking dish, heat olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  3. Add the minced garlic, sliced carrot, and bell pepper, and cook for another 5 minutes until softened.
  4. Season the chicken thighs with salt, black pepper, cumin, and paprika. Add them to the pot, browning on all sides for about 8 minutes.
  5. Stir in the diced tomato, green olives, and chopped cilantro, mixing well.
  6. Pour in the water and lemon juice. Bring the mixture to a gentle simmer.
  7. Cover the tajine or baking dish with a lid or aluminum foil and transfer it to the preheated oven.
  8. Bake for 40-45 minutes, or until the chicken is cooked through and tender.
  9. Remove from the oven and let it rest for a few minutes before serving.
