- Chicken thighs - 300 grams
- Green olives - 100 grams, pitted
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Carrot - 1 medium, sliced
- Bell pepper - 1 medium, sliced
- Tomato - 1 medium, diced
- Cilantro - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 250 milliliters
Steps
- Preheat your oven to 180°C (350°F).
- In a tajine pot or a suitable baking dish, heat olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic, sliced carrot, and bell pepper, and cook for another 5 minutes until softened.
- Season the chicken thighs with salt, black pepper, cumin, and paprika. Add them to the pot, browning on all sides for about 8 minutes.
- Stir in the diced tomato, green olives, and chopped cilantro, mixing well.
- Pour in the water and lemon juice. Bring the mixture to a gentle simmer.
- Cover the tajine or baking dish with a lid or aluminum foil and transfer it to the preheated oven.
- Bake for 40-45 minutes, or until the chicken is cooked through and tender.
- Remove from the oven and let it rest for a few minutes before serving.
