  • Green olives - 100 grams, pitted
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chicken broth - 250 ml
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. Heat the olive oil in a tajine or a large skillet over medium heat.
  2. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the chicken thighs to the skillet, browning them on all sides for about 8 minutes.
  5. Season the chicken with cumin, paprika, turmeric, cinnamon, salt, and black pepper, stirring to coat evenly.
  6. Pour in the chicken broth, bringing the mixture to a gentle simmer.
  7. Cover and cook for 20 minutes, or until the chicken is cooked through and tender.
  8. Add the green olives to the skillet, stirring to combine, and cook for an additional 5 minutes.
