Ingredients
- Artichoke hearts - 400 grams (canned or fresh, if fresh, use 2 medium artichokes)
- Chickpeas - 240 grams (cooked, about 1 cup)
- Carrot - 1 medium, sliced
- Red bell pepper - 1 medium, diced
- Onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Tomato - 1 medium, chopped
- Vegetable broth - 250 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - a handful, chopped (for garnish)
Steps
- If using fresh artichokes, prepare them by removing the outer leaves and trimming the tops, then boil in salted water until tender, about 20 minutes. If using canned artichokes, drain and set aside.
- In a tajine or a heavy-bottomed pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, sliced carrots, and diced red bell pepper to the pot. Cook for another 5 minutes, stirring occasionally.
- Stir in the chopped tomato, ground cumin, ground coriander, paprika, turmeric, salt, and black pepper. Cook for 3 minutes until the spices are fragrant.
- Add the cooked chickpeas and vegetable broth to the pot. Bring to a gentle simmer.
- Carefully add the artichoke hearts to the pot, stirring gently to combine. Cover and let it simmer for about 15 minutes, allowing the flavors to meld.
- Once cooked, taste and adjust seasoning if necessary. Garnish with chopped fresh cilantro before serving.
