  • Chickpeas - 200 grams (cooked)
  • Carrot - 1 medium, grated
  • Zucchini - 1 small, grated
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cilantro - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • All-purpose flour - 3 tablespoons
  • Olive oil - 2 tablespoons (for frying)
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1 medium, sliced
  • Cucumber - 1/2, sliced
  • Tahini sauce - 4 tablespoons (optional)

Steps

  1. In a mixing bowl, mash the cooked chickpeas with a fork until slightly chunky.
  2. Add the grated carrot, zucchini, red onion, minced garlic, and chopped cilantro. Mix well.
  3. Sprinkle in the cumin, coriander, paprika, salt, and black pepper. Stir until all ingredients are combined.
  4. Gradually add the all-purpose flour to the mixture, mixing until it holds together. If too wet, add more flour as needed.
  5. Form the mixture into 2 equal-sized patties.
  6. Heat olive oil in a non-stick skillet over medium heat. Once hot, add the patties to the skillet.
  7. Cook the patties for about 5-6 minutes on each side, or until golden brown and crispy.
  8. While the patties are cooking, toast the whole wheat burger buns until lightly browned.
  9. Assemble the burgers by placing a lettuce leaf on each bun, followed by the vegetable patty, slices of tomato, and cucumber. Drizzle with tahini sauce if desired.
