- Chickpeas - 200 grams (cooked)
- Carrot - 1 medium, grated
- Zucchini - 1 small, grated
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cilantro - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- All-purpose flour - 3 tablespoons
- Olive oil - 2 tablespoons (for frying)
- Whole wheat burger buns - 2
- Lettuce leaves - 2
- Tomato - 1 medium, sliced
- Cucumber - 1/2, sliced
- Tahini sauce - 4 tablespoons (optional)
Steps
- In a mixing bowl, mash the cooked chickpeas with a fork until slightly chunky.
- Add the grated carrot, zucchini, red onion, minced garlic, and chopped cilantro. Mix well.
- Sprinkle in the cumin, coriander, paprika, salt, and black pepper. Stir until all ingredients are combined.
- Gradually add the all-purpose flour to the mixture, mixing until it holds together. If too wet, add more flour as needed.
- Form the mixture into 2 equal-sized patties.
- Heat olive oil in a non-stick skillet over medium heat. Once hot, add the patties to the skillet.
- Cook the patties for about 5-6 minutes on each side, or until golden brown and crispy.
- While the patties are cooking, toast the whole wheat burger buns until lightly browned.
- Assemble the burgers by placing a lettuce leaf on each bun, followed by the vegetable patty, slices of tomato, and cucumber. Drizzle with tahini sauce if desired.
