- Tomatoes - 2 medium, chopped
- Chickpeas - 1 can (400g), drained and rinsed
- Vegetable broth - 500 ml
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Cilantro - a handful, chopped (for garnish)
Steps
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 5 minutes.
- Stir in the diced carrot, zucchini, and bell pepper, cooking for another 5 minutes until they begin to soften.
- Add the chopped tomatoes, drained chickpeas, vegetable broth, cumin, coriander, paprika, cinnamon, salt, and black pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes, allowing the flavors to meld together.
- Taste and adjust seasoning if necessary, then remove from heat.
- Serve hot, garnished with chopped cilantro.
