Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Tomatoes - 2 medium, chopped
  • Chickpeas - 1 can (400g), drained and rinsed
  • Vegetable broth - 500 ml
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro - a handful, chopped (for garnish)

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 5 minutes.
  3. Stir in the diced carrot, zucchini, and bell pepper, cooking for another 5 minutes until they begin to soften.
  4. Add the chopped tomatoes, drained chickpeas, vegetable broth, cumin, coriander, paprika, cinnamon, salt, and black pepper.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes, allowing the flavors to meld together.
  6. Taste and adjust seasoning if necessary, then remove from heat.
  7. Serve hot, garnished with chopped cilantro.
