Ingredients
- Basmati rice - 150 grams
- Chicken breast, diced - 200 grams
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Carrot, diced - 1 medium
- Bell pepper, diced - 1 medium
- Zucchini, diced - 1 small
- Dried apricots, chopped - 50 grams
- Almonds, slivered - 30 grams
- Cinnamon powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1 teaspoon
- Olive oil - 2 tablespoons
- Vegetable broth - 400 ml
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro, chopped - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
- Add the diced chicken breast to the pan and cook until browned on all sides.
- Stir in the diced carrot, bell pepper, and zucchini, cooking for an additional 5 minutes until the vegetables start to soften.
- Add the chopped dried apricots, slivered almonds, cinnamon, cumin, turmeric, salt, and black pepper. Mix well to combine.
- Drain the soaked rice and add it to the pan. Pour in the vegetable broth and bring to a boil.
- Once boiling, reduce the heat to low, cover the pan, and let it simmer for about 15-20 minutes or until the rice is cooked and has absorbed all the liquid.
- Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh cilantro and serve warm.
