Ingredients

  • Basmati rice - 150 grams
  • Chicken breast, diced - 200 grams
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Carrot, diced - 1 medium
  • Bell pepper, diced - 1 medium
  • Zucchini, diced - 1 small
  • Dried apricots, chopped - 50 grams
  • Almonds, slivered - 30 grams
  • Cinnamon powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Vegetable broth - 400 ml
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro, chopped - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
  3. Add the diced chicken breast to the pan and cook until browned on all sides.
  4. Stir in the diced carrot, bell pepper, and zucchini, cooking for an additional 5 minutes until the vegetables start to soften.
  5. Add the chopped dried apricots, slivered almonds, cinnamon, cumin, turmeric, salt, and black pepper. Mix well to combine.
  6. Drain the soaked rice and add it to the pan. Pour in the vegetable broth and bring to a boil.
  7. Once boiling, reduce the heat to low, cover the pan, and let it simmer for about 15-20 minutes or until the rice is cooked and has absorbed all the liquid.
  8. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
  9. Garnish with fresh cilantro and serve warm.
