Ingredients

  • White fish fillets (e.g., cod or haddock) - 300 grams
  • Zucchini - 1 medium, sliced
  • Red bell pepper - 1 medium, sliced
  • Yellow bell pepper - 1 medium, sliced
  • Cherry tomatoes - 200 grams, halved
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat olive oil in a tagine or a heavy-bottomed pot over medium heat.
  2. Add chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Stir in the sliced zucchini, red and yellow bell peppers, and cherry tomatoes; cook for about 5 minutes until slightly softened.
  4. Add cumin, paprika, salt, and black pepper; mix well to coat the vegetables with spices.
  5. Nestle the fish fillets on top of the vegetable mixture, and drizzle with lemon juice.
  6. Cover the tagine or pot with a lid and reduce heat to low; let cook for about 15-20 minutes until the fish is cooked through and flakes easily.
  7. Garnish with chopped cilantro before serving.
