- Zucchini - 1 medium, sliced
- Red bell pepper - 1 medium, sliced
- Yellow bell pepper - 1 medium, sliced
- Cherry tomatoes - 200 grams, halved
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon

Steps
- Heat olive oil in a tagine or a heavy-bottomed pot over medium heat.
- Add chopped onion and minced garlic, and sauté until the onion is translucent.
- Stir in the sliced zucchini, red and yellow bell peppers, and cherry tomatoes; cook for about 5 minutes until slightly softened.
- Add cumin, paprika, salt, and black pepper; mix well to coat the vegetables with spices.
- Nestle the fish fillets on top of the vegetable mixture, and drizzle with lemon juice.
- Cover the tagine or pot with a lid and reduce heat to low; let cook for about 15-20 minutes until the fish is cooked through and flakes easily.
- Garnish with chopped cilantro before serving.
