- Pizza dough - 200 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, thinly sliced
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Zucchini - 1 small, diced
- Carrot - 1 medium, grated
- Canned chickpeas - 100 grams, drained and rinsed
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Tomato sauce - 100 grams
- Feta cheese - 50 grams, crumbled
- Fresh cilantro - for garnish
Steps
- Preheat your oven to 220°C (428°F).
- In a skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent, about 3-4 minutes.
- Add the diced red bell pepper, zucchini, and grated carrot to the skillet, cooking for another 5 minutes until softened.
- Stir in the chickpeas, cumin, cinnamon, paprika, salt, and black pepper. Cook for an additional 2-3 minutes, allowing the spices to become fragrant.
- Roll out the pizza dough on a floured surface to your desired thickness and place it on a pizza stone or baking sheet.
- Spread the tomato sauce evenly over the base of the pizza dough.
- Top with the sautéed vegetable mixture and sprinkle crumbled feta cheese on top.
- Bake in the preheated oven for 12-15 minutes, or until the crust is golden and crispy.
- Remove from the oven and let cool for a couple of minutes. Garnish with fresh cilantro before slicing and serving.
