Ingredients

  • Pizza dough - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, thinly sliced
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Zucchini - 1 small, diced
  • Carrot - 1 medium, grated
  • Canned chickpeas - 100 grams, drained and rinsed
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Tomato sauce - 100 grams
  • Feta cheese - 50 grams, crumbled
  • Fresh cilantro - for garnish

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent, about 3-4 minutes.
  3. Add the diced red bell pepper, zucchini, and grated carrot to the skillet, cooking for another 5 minutes until softened.
  4. Stir in the chickpeas, cumin, cinnamon, paprika, salt, and black pepper. Cook for an additional 2-3 minutes, allowing the spices to become fragrant.
  5. Roll out the pizza dough on a floured surface to your desired thickness and place it on a pizza stone or baking sheet.
  6. Spread the tomato sauce evenly over the base of the pizza dough.
  7. Top with the sautéed vegetable mixture and sprinkle crumbled feta cheese on top.
  8. Bake in the preheated oven for 12-15 minutes, or until the crust is golden and crispy.
  9. Remove from the oven and let cool for a couple of minutes. Garnish with fresh cilantro before slicing and serving.
