Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Carrot - 1 large, sliced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Chickpeas - 200 grams, cooked
  • Tomato - 1 large, diced
  • Vegetable broth - 250 ml
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a tajine or a large pot over medium heat.
  2. Add the diced onion and sauté for 5 minutes until softened.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the sliced carrot, diced zucchini, and red bell pepper, and sauté for 5-7 minutes until slightly tender.
  5. Stir in the cooked chickpeas and diced tomato, mixing well.
  6. Add the vegetable broth, cumin, coriander, paprika, cinnamon, salt, and black pepper.
  7. Bring the mixture to a boil, then reduce the heat to low and cover the tajine or pot.
  8. Let it simmer for 20-25 minutes until the vegetables are cooked through and flavors meld.
  9. Remove from heat and garnish with fresh parsley before serving.
