- Zucchini - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Chickpeas - 200 grams, cooked
- Tomato - 1 large, diced
- Vegetable broth - 250 ml
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a tajine or a large pot over medium heat.
- Add the diced onion and sauté for 5 minutes until softened.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the sliced carrot, diced zucchini, and red bell pepper, and sauté for 5-7 minutes until slightly tender.
- Stir in the cooked chickpeas and diced tomato, mixing well.
- Add the vegetable broth, cumin, coriander, paprika, cinnamon, salt, and black pepper.
- Bring the mixture to a boil, then reduce the heat to low and cover the tajine or pot.
- Let it simmer for 20-25 minutes until the vegetables are cooked through and flavors meld.
- Remove from heat and garnish with fresh parsley before serving.
