Ingredients

  • Rabbit meat - 300 grams, cut into pieces
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Red bell pepper - 1, chopped
  • Canned tomatoes - 200 grams, chopped
  • Chicken broth - 250 ml
  • Ras el hanout spice blend - 1 tablespoon
  • Cumin powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chickpeas - 100 grams, cooked
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, for serving

Steps

  1. Heat the olive oil in a tajine or a heavy-bottomed pot over medium heat.
  2. Add the chopped onion and garlic, sauté until softened and translucent, about 5 minutes.
  3. Stir in the rabbit pieces and brown them on all sides, about 10 minutes.
  4. Add the carrot, zucchini, and red bell pepper, cooking for another 5 minutes.
  5. Sprinkle in the ras el hanout, cumin, salt, and black pepper, stirring to coat the vegetables and meat.
  6. Pour in the canned tomatoes and chicken broth, bringing the mixture to a simmer.
  7. Cover the tajine or pot, reduce the heat to low, and let it cook for 30-40 minutes, until the rabbit is tender.
  8. In the last 5 minutes of cooking, add the cooked chickpeas to the pot.
  9. Serve hot, garnished with fresh parsley and a wedge of lemon on the side.
