Ingredients
- Rabbit meat - 300 grams, cut into pieces
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Red bell pepper - 1, chopped
- Canned tomatoes - 200 grams, chopped
- Chicken broth - 250 ml
- Ras el hanout spice blend - 1 tablespoon
- Cumin powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chickpeas - 100 grams, cooked
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, for serving
Steps
- Heat the olive oil in a tajine or a heavy-bottomed pot over medium heat.
- Add the chopped onion and garlic, sauté until softened and translucent, about 5 minutes.
- Stir in the rabbit pieces and brown them on all sides, about 10 minutes.
- Add the carrot, zucchini, and red bell pepper, cooking for another 5 minutes.
- Sprinkle in the ras el hanout, cumin, salt, and black pepper, stirring to coat the vegetables and meat.
- Pour in the canned tomatoes and chicken broth, bringing the mixture to a simmer.
- Cover the tajine or pot, reduce the heat to low, and let it cook for 30-40 minutes, until the rabbit is tender.
- In the last 5 minutes of cooking, add the cooked chickpeas to the pot.
- Serve hot, garnished with fresh parsley and a wedge of lemon on the side.
