- Vegetable broth - 250 ml
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- In a tajine or a heavy-bottomed pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the sliced carrot and chopped red bell pepper, stirring well to combine.
- In a small bowl, mix the cumin, paprika, turmeric, cinnamon, salt, and black pepper.
- Sprinkle the spice mix over the vegetables and stir to coat evenly.
- Add the cubed potatoes to the pot and mix well with the vegetables and spices.
- Pour in the vegetable broth and bring the mixture to a gentle simmer.
- Cover the pot and cook for about 30 minutes, or until the potatoes are tender, stirring occasionally.
