Ingredients

  • Potatoes - 500 grams, peeled and cut into large cubes
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, sliced
  • Red bell pepper - 1 medium, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 250 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. In a tajine or a heavy-bottomed pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the sliced carrot and chopped red bell pepper, stirring well to combine.
  5. In a small bowl, mix the cumin, paprika, turmeric, cinnamon, salt, and black pepper.
  6. Sprinkle the spice mix over the vegetables and stir to coat evenly.
  7. Add the cubed potatoes to the pot and mix well with the vegetables and spices.
  8. Pour in the vegetable broth and bring the mixture to a gentle simmer.
  9. Cover the pot and cook for about 30 minutes, or until the potatoes are tender, stirring occasionally.
  10. Once cooked, remove from heat and stir in the fresh parsley and lemon juice.
