  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, sliced
  • Bell pepper - 1 medium, diced
  • Tomato - 1 medium, chopped
  • Vegetable broth - 250 ml
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Ginger - 1/2 teaspoon, grated
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped, for garnish
  • Lemon - 1, juiced

Steps

  1. Heat the olive oil in a tajine or large pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, sliced carrot, and diced bell pepper, cooking for another 5 minutes until they start to soften.
  4. Add the chopped tomato and cook for an additional 3 minutes, stirring occasionally.
  5. Sprinkle in the cumin, cinnamon, paprika, grated ginger, salt, and black pepper, mixing well to combine the spices with the vegetables.
  6. Gently fold in the artichoke hearts, ensuring they are well coated with the spice mixture.
  7. Pour in the vegetable broth, bring the mixture to a gentle simmer, and cover the pot or tajine.
  8. Cook for 20 minutes on low heat, allowing the flavors to meld and the vegetables to become tender.
  9. Remove from heat, stir in the lemon juice, and let it rest for 5 minutes before serving.
  10. Garnish with fresh parsley and serve warm, ideally with crusty bread or over couscous.
