Ingredients

  • Lamb shoulder - 500 grams, cut into cubes
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ground ginger - 1 teaspoon
  • Ground cinnamon - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Ground turmeric - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Honey - 2 tablespoons
  • Dried apricots - 100 grams, chopped
  • Raisins - 50 grams
  • Almonds - 50 grams, toasted and chopped
  • Water - 500 milliliters
  • Fresh cilantro - for garnish

Steps

  1. Heat olive oil in a tajine or heavy-bottomed pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the lamb cubes to the pot, browning them on all sides for about 5-7 minutes.
  5. Sprinkle in the ground ginger, cinnamon, cumin, turmeric, salt, and black pepper, stirring well to coat the meat.
  6. Drizzle the honey over the lamb and mix to combine.
  7. Add the chopped dried apricots, raisins, and water, stirring gently.
  8. Bring the mixture to a simmer, then cover and reduce the heat to low.
  9. Cook for about 60 minutes, or until the lamb is tender and the flavors meld together.
  10. In the last 10 minutes of cooking, add the toasted almonds to the tajine.
  11. Once done, remove from heat and let it rest for a few minutes before serving.
  12. Garnish with fresh cilantro before serving.
