Ingredients
- Lamb shoulder - 500 grams, cut into cubes
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ground ginger - 1 teaspoon
- Ground cinnamon - 1 teaspoon
- Ground cumin - 1 teaspoon
- Ground turmeric - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Honey - 2 tablespoons
- Dried apricots - 100 grams, chopped
- Raisins - 50 grams
- Almonds - 50 grams, toasted and chopped
- Water - 500 milliliters
- Fresh cilantro - for garnish
Steps
- Heat olive oil in a tajine or heavy-bottomed pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute.
- Add the lamb cubes to the pot, browning them on all sides for about 5-7 minutes.
- Sprinkle in the ground ginger, cinnamon, cumin, turmeric, salt, and black pepper, stirring well to coat the meat.
- Drizzle the honey over the lamb and mix to combine.
- Add the chopped dried apricots, raisins, and water, stirring gently.
- Bring the mixture to a simmer, then cover and reduce the heat to low.
- Cook for about 60 minutes, or until the lamb is tender and the flavors meld together.
- In the last 10 minutes of cooking, add the toasted almonds to the tajine.
- Once done, remove from heat and let it rest for a few minutes before serving.
- Garnish with fresh cilantro before serving.
