- Garlic - 2 cloves, minced
- Tomato - 1 medium, chopped
- Cilantro - 2 tablespoons, chopped
- Parsley - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 200 ml
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the chopped tomato, cumin, paprika, salt, and black pepper. Cook for 5 minutes, allowing the tomatoes to break down.
- In a baking dish, combine the sautéed mixture with the green beans, chopped cilantro, and parsley. Mix well.
- Pour the water over the mixture, cover the dish with aluminum foil, and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 10 minutes to allow the top to slightly brown.
- Once done, remove from the oven and let it rest for a few minutes before serving.
