Ingredients

  • Green beans - 250 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, chopped
  • Cilantro - 2 tablespoons, chopped
  • Parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 200 ml

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the chopped tomato, cumin, paprika, salt, and black pepper. Cook for 5 minutes, allowing the tomatoes to break down.
  5. In a baking dish, combine the sautéed mixture with the green beans, chopped cilantro, and parsley. Mix well.
  6. Pour the water over the mixture, cover the dish with aluminum foil, and bake in the preheated oven for 30 minutes.
  7. Remove the foil and bake for an additional 10 minutes to allow the top to slightly brown.
  8. Once done, remove from the oven and let it rest for a few minutes before serving.
