Ingredients

  • Couscous - 150 grams
  • Water - 250 milliliters
  • Chickpeas (cooked) - 100 grams
  • Carrot (diced) - 1 medium
  • Zucchini (diced) - 1 medium
  • Red bell pepper (diced) - 1 medium
  • Onion (chopped) - 1 small
  • Garlic (minced) - 2 cloves
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a medium saucepan, bring the water to a boil and add a pinch of salt. Once boiling, remove from heat and stir in the couscous. Cover and let it sit for 5 minutes.
  3. In a large baking dish, heat the olive oil over medium heat and sauté the onion and garlic until softened, about 3-4 minutes.
  4. Add the diced carrot, zucchini, and red bell pepper to the baking dish. Sauté for another 5-7 minutes until the vegetables begin to soften.
  5. Stir in the cooked chickpeas, ground cumin, ground coriander, paprika, salt, and black pepper. Mix well to combine all ingredients.
  6. Fluff the couscous with a fork and then add it to the vegetable mixture in the baking dish. Add lemon juice and chopped parsley, then mix everything together until well combined.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  8. Remove the foil and bake for an additional 10 minutes, allowing the top to crisp slightly. Serve warm, garnished with extra parsley if desired.
