- Couscous - 150 grams
- Water - 250 milliliters
- Chickpeas (cooked) - 100 grams
- Carrot (diced) - 1 medium
- Zucchini (diced) - 1 medium
- Red bell pepper (diced) - 1 medium
- Onion (chopped) - 1 small
- Garlic (minced) - 2 cloves
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley (chopped) - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- Preheat your oven to 180°C (350°F).
- In a medium saucepan, bring the water to a boil and add a pinch of salt. Once boiling, remove from heat and stir in the couscous. Cover and let it sit for 5 minutes.
- In a large baking dish, heat the olive oil over medium heat and sauté the onion and garlic until softened, about 3-4 minutes.
- Add the diced carrot, zucchini, and red bell pepper to the baking dish. Sauté for another 5-7 minutes until the vegetables begin to soften.
- Stir in the cooked chickpeas, ground cumin, ground coriander, paprika, salt, and black pepper. Mix well to combine all ingredients.
- Fluff the couscous with a fork and then add it to the vegetable mixture in the baking dish. Add lemon juice and chopped parsley, then mix everything together until well combined.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, allowing the top to crisp slightly. Serve warm, garnished with extra parsley if desired.
