Ingredients

  • Zucchini - 1 medium, sliced
  • Carrot - 1 medium, sliced
  • Bell pepper - 1 medium, chopped
  • Potato - 1 medium, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, chopped
  • Chickpeas - 100 grams, cooked
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Vegetable broth - 250 ml

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large mixing bowl, combine the zucchini, carrot, bell pepper, potato, onion, garlic, tomato, and chickpeas.
  3. Drizzle the olive oil over the vegetables and sprinkle with cumin, paprika, cinnamon, salt, and black pepper. Toss well to coat all the vegetables evenly.
  4. Transfer the vegetable mixture into a tajine or an oven-safe dish, spreading it out evenly.
  5. Pour the vegetable broth over the vegetables to ensure they are moist but not submerged.
  6. Cover the tajine with its lid or with aluminum foil if using a baking dish.
  7. Bake in the preheated oven for 30 minutes, or until the vegetables are tender.
  8. Remove from the oven, and sprinkle with fresh parsley before serving.
