- Zucchini - 1 medium, sliced
- Carrot - 1 medium, sliced
- Bell pepper - 1 medium, chopped
- Potato - 1 medium, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, chopped
- Chickpeas - 100 grams, cooked
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Vegetable broth - 250 ml
Steps
- Preheat your oven to 180°C (350°F).
- In a large mixing bowl, combine the zucchini, carrot, bell pepper, potato, onion, garlic, tomato, and chickpeas.
- Drizzle the olive oil over the vegetables and sprinkle with cumin, paprika, cinnamon, salt, and black pepper. Toss well to coat all the vegetables evenly.
- Transfer the vegetable mixture into a tajine or an oven-safe dish, spreading it out evenly.
- Pour the vegetable broth over the vegetables to ensure they are moist but not submerged.
- Cover the tajine with its lid or with aluminum foil if using a baking dish.
- Bake in the preheated oven for 30 minutes, or until the vegetables are tender.
- Remove from the oven, and sprinkle with fresh parsley before serving.
